Do you can tomatoes? I am getting into the local food movement and I think I would eventually like to can tomatoes, but I hear you have to add lemon juice these days. My mother and grandmother were always canning something.
I don't can tomatoes. Tomatoes don't grow well here except in a green house, which make them much too precious to can.
But yes, I've heard they have to be canned differently now in order to be safe. They're less acidy than than they used to be or something.
