Strawberry-Rhubarb Pie

This is my entry in tomorrow’s dessert recipe round up at Simply a Musing Blog. This recipe was posted previously at my old blogger blog. It’s cheap strawberry season here and the rhubarb is up in the garden, so I’ve been thinking of making this.

One unbaked pie shell

Filling
  • 1 egg
  • 1 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 3 cups sliced fresh rhubarb (1/2 inch slices)
  • 2 cups sliced fresh strawberries
Topping
  • 3/4 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 cup oats (quick cooking or rolled)
  • 1/2 cup butter
  1. Preheat oven to 400F
  2. Place pie shell in a 9 inch pie pan, fold under excess and flute edge
  3. In a large mixing bowl, beat egg. Beat in the sugar, flour and vanilla. Fold in the sliced rhubarb and strawberries. Pour this filling into pie shell.
  4. In a medium bowl, mix flour, brown sugar and oats. Cut the butter in until crumbly. Sprinkle on top of the pie filling.
  5. Bake at 400F for 10 minutes, and then reduce heat to 350F and bake for 35 minutes longer. Top should be brown and bubbly.
  6. Cool a bit before serving with whipped cream or ice cream.
  7. Store cooled pie in the refrigerator.

This Month's Upcoming Recipe Round Up

recipe%20round%20up.JPG

This month’s recipe round up will be hosted by Karen of Simply A Musing Blog

The category is desserts

The date is June 14

Hostess Karen gives all the details here.

So start thinking about what you’ll bring to the dessert potluck. High fat, low fat, and everything in between. Don’t forget to look around for other posted dessert recipes as well, since Karen reminds us:

Feel free to send links to recipes you have seen on someone else’s blog as well - we are all about getting the goods back out to you, the people.

As far as I know, there has been no hostess or category designated for July’s Recipe Round-Up, and since I’m the one who started this whole thing going, and have a vested interest, then, in seeing it continue, I’m going to ask for volunteers here and now.  Any takers?  You can name your own category.  So far, there have been Quick Supper Fixin’s, Appetizers, and Desserts.

Easy Cream Cheese and Spinach Roll Ups

These are good for when you need something that looks more fancy than crackers and cheese, but takes just about as much time and thought .

recipe%20round%20up.JPG

Spread tortillas with cream cheese. Place spinach leaves in a single layer on top to cover the cream cheese. Roll up the tortillas, wrap in plastic wrap and refrigerate for a couple of hours or until serving time. Slice each tortilla roll into 1-inch thick pieces, place pieces cut side up on a platter and serve.

Variations:

  • Egg Salad and Spinach Roll Ups—Substitute egg salad for the cream cheese.
  • Tuna and Spinach Roll Ups—Substitute tuna salad for the cream cheese.
  • Ham and Spinach Roll Ups—Place a layer of thin sliced deli ham between the cream cheese and the spinach.
Be sure to browse more appetizer recipes in May’s Recipe Round Up found at Hireath today. There’s still time to participate if you’d like, since Kim will add recipes to the collection until 8pm CDT today.  (Isn’t this fun?)

Next month’s Recipe Round Up will feature desserts at Simply A Musing Blog. I’ll be sure to post more details of that one as the date for it approaches.
